Tribal Cuisine: Gurji Kheer


    Little Millet (Gurji) Kheer

    Ingredients :

    1. Little millet (Gurji) rice – 250 gm
    2. Milk – 2.5 ltr
    3. Sugar – 4000 gm( you can take less or more  as per your taste)
    4. Cashew nut – 50 gm
    5. Raisin – 50 gm
    6. Green cardamom powder– 1/4thtbs
    7. Ghee-50gm

    Preparation Method : –

    1. Wash Little millet(Gurji) rice and keep aside.
    2. Take a pan and heat ghee in a low flame.
    3. Add cashew and raisin in ghee , roast it and keep aside in a plate.
    4. Putghee  in the same pan and add Little millet(Gurji) ricein to it .
    5. Mix wellin a low flame for 2 to 3minutes  and keep aside .
    6. Add half liter of water in to milk and boil it in a separate vessel.
    7. Add roasted Little millet(Gurji) rice to boiled milk and cook it for around 20 to 25 minute in a medium flame.
    8. Add sugar to in to it  and stir slowly for 5 minutes .
    9. Add roasted  cashew nuts and raisin, then add cardamom powder and mix well.
    10. Now Little millet(Gurji) kheer is ready to serve.


    • You can also prepare kheer with Foxtail millet ( Kangu ) rice/ Barnyard millet (Jhari) rice/Kodo millet rice /Proso (China) millet rice in a  similar way).
    • Instead of Sugar you can also use jaggery.
